Maine Lobster Poke Bowls

Ingredients

Bowl Ingredients:

  • 1 pound cooked Maine Lobster meat, cut into large pieces
  • 1 green onion, thinly sliced
  • ½ cup shelled edamame

Sauce Ingredients:

  • ¼ cup mayonnaise
  • 1 Tablespoon soy sauce
  • 1 Tablespoon Sriracha sauce (omit for less heat)
  • 2 teaspoons pickled ginger, finely chopped (or ½ teaspoon freshly grated ginger)
  • 2 teaspoons fresh lime juice
  • ½ teaspoon sesame oil
  • Salt, to taste

Additional Ingredients to serve:

  • 3 cups cooked white rice
  • 1 avocado, peeled, pitted, and diced
  • ¼ english cucumber, thinly sliced into half moons
  • 1 green onion, thinly sliced
  • 3 radishes, thinly sliced
  • 1 jalapeno, thinly sliced
  • Black sesame seeds

Directions

For the sauce: Whisk together sauce ingredients until well combined.

Toss with the lobster, green onion, and edamame. Cover and refrigerate for 1 hour before serving.

Serve over a bed of rice garnished with avocado, cucumber, green onion, radishes, jalapeno, and black sesame seeds.
