Air-Fried Maine Lobster Bisque Mac and Cheese

Ingredients

Lobster Bisque
Maine Lobster tails

4 (raw)

Unsalted butter

2 TBSP

Small onion

1 (finely chopped)

Celery stalk

1 (finely chopped)

Large Carrot

1 (finely chopped)

Garlic

2 Cloves (minced)

Tomato paste

2 TBSP

Dry white wine

1/4 CUP

Fish or seafood stock

3 CUPS

Heavy cream

1 CUP

Paprika

1/4 TSP

Salt and black pepper

To taste

Cayenne pepper

Pinch (optional)

Mac and Cheese
Elbow macaroni or pasta of your choice

8 OZ

Shredded sharp cheddar cheese

3 CUPS

Shredded Gruyère cheese

1 CUP

Shredded Parmesan cheese

1/2 CUP

Unsalted butter

2 TBSP

All-purpose flour

2 TBSP

Whole milk

2 CUPS

Dry mustard powder

1/2 TSP

Cayenne pepper

1/2 TSP

Hot sauce

1 TSP

Salt and black pepper

To taste

Fresh parsley

Chopped for garnish (optional)

Directions

Step 1:

Prepare the Lobster Bisque.

Step 2:

Start by preparing the lobster tails. Using kitchen shears or a sharp knife, carefully cut the top shell of each lobster tail lengthwise, exposing the meat. 

Step 3:

Season with sage, parsley, garlic powder and rosemary. With the shell side down, place the lobster in the air fryer and cook at 380°F for 5-7 minutes or until cooked through. Remove the meat and set aside.

Step 4:

In a large saucepan, melt 2 tablespoons of butter over medium heat. Add the chopped onion, celery and carrot. Sauté for about 5 minutes or until the vegetables become soft and fragrant.

Step 5:

Add the minced garlic and tomato paste to the pan. Cook for an additional 2 minutes, stirring constantly.

Step 6:

Pour in the white wine and cook for another 2 minutes, allowing it to reduce slightly.

Step 7:

Add the reserved lobster shells to the pan and pour in the fish or seafood stock. Bring the mixture to a simmer, then reduce the heat to low, cover and let it simmer for about 20-25 minutes to infuse the flavors.

Step 8:

While the bisque is simmering, prepare the pasta and cheese sauce (see below).

Step 9:

After simmering, strain the bisque through a fine mesh sieve into a clean saucepan, discarding the solids. Return the strained bisque to low heat and stir in the heavy cream, paprika, cayenne pepper (if using), salt and black pepper. Keep it warm over low heat.

Step 10:

Prepare the Mac and Cheese.

Step 11:

Cook the pasta according to the package instructions until al dente. Drain and set aside.

Step 12:

In a large saucepan, melt 2 tablespoons of butter over medium heat. Add the flour and whisk continuously for 1-2 minutes to create a roux.

Step 13:

Gradually pour in the milk while whisking constantly to avoid lumps. Continue to cook and whisk until the mixture thickens, about 5-7 minutes.

Step 14:

Reduce the heat to low and add the shredded cheddar, Gruyère and Parmesan cheeses to the milk mixture. Stir until the cheeses are fully melted and the sauce is smooth. Season with spices.

Step 15:

Bring all parts together.

Step 16:

Add the cooked pasta to the cheese sauce, stirring to coat the pasta evenly.

Step 17:

Add half the mac and cheese into a pan, layer in a ladle of lobster bisque and mix. Add more mac and cheese, and layer another ladle of lobster bisque – don’t mix.

Step 18:

Sprinkle a half cup of cheddar and a half cup of Gruyère on top. 

Step 19:

Broil in oven at 350°F until top cheese layer is melted.

Step 20:

Add in the reserved lobster meat you set aside in Step 2 of the bisque section. Enjoy your decadent Maine Lobster Bisque Mac and Cheese, a perfect combination of creamy, cheesy goodness with the rich flavors of lobster bisque!
