That’s because after lobsters develop their New Shell, seawater fills the excess space. It helps to naturally marinate the meat and add a sweet and salty flavor.

Hard Shell lobsters are available year-round. New Shell lobsters are primarily available in summer and fall as live lobsters or fresh meat. New Shell lobsters are available frozen year-round.
