Ingredients
2 CUPS (1 LB)
2 LARGE
1 TBSP
1/2 CUP DICED
1/4 CUP DICED
2 TBSP CHOPPED
1/4 CUP CRUMBLED
1/4 CUP FRESH CHOPPED
1/2 TSP
1/4 TSP
2 TBSP
1/2 CUP
Directions
Step 1:
In a large pan, melt the butter and add the lobster to the pan
Step 2:
Sprinkle the Old Bay seasoning over the lobster and cook for 3-4 minutes and the lobster is fully cooked
Step 3:
Using a slotted spoon, scoop out the lobster and transfer to a bowl
Step 4:
Place the lobster in the fridge for about 20 minutes to cool
Step 5:
Add the mayonnaise, cucumber, red onion, chives, feta, cilantro, salt and pepper to a bowl

Step 6:
Once the lobster has cooled roughly chop it into small pieces and add to the bowl

Step 7:
Gently mix everything together, taste and season more if you need to

Step 8:
Slice each avocado into two and discard the pit
Step 9:
Place the avocados on a plate and add a generous sized scoop to the center of each avocado

Step 10:
Garnish with extra chopped chives
