2 lobster tails

Egg Yolks

2, beaten

Seasoned Panko Breadcrumbs

1 cup

Seafood Seasoning (Old Bay or your favorite blend)

Directions

Step 1: Prep the Maine Lobster

Start by splitting each lobster tail right up the middle with kitchen shears or a sharp knife, exposing the meat while keeping the shell intact underneath. Gently lift the meat slightly out of the shell, so it rests on top.

Step 2: Season and Coat

Brush the lobster meat with beaten egg yolk until it’s fully covered. In a separate bowl, mix together your seasoned Panko crumbs, hush puppy mix, and seafood seasoning. Roll each lobster tail in the crumb mixture, making sure it’s evenly coated. 

Step 3: Fry

Heat oil in a deep fryer or heavy skillet to 350°F. Carefully place the lobster tails in the hot oil and fry until golden brown and crispy — about 3–5 minutes, depending on the size of the tails.

Finish and Serve

Step 4: Finish and Serve

Remove the lobster tails and place them on paper towels to drain any excess oil. Garnish with freshly chopped parsley for a pop of color.

Step 5: Serve

Serve hot with lemon wedges, tartar sauce, or a drizzle of melted butter. Perfect crispy lobster with a Maine twist!
