Baked Ziti Alla Vodka With Air-Fried Maine Lobster Tail

Air Fried Lobster Tail
Raw Maine Lobster tails in shell

Olive oil

Garlic powder

Vodka Sauce
Grass-fed butter

2 TBSP

Small onion

1 (finely chopped)

Garlic

2 Cloves (minced)

Crushed tomatoes

1 can (28 oz)

Vodka

1/2 CUP

Heavy cream

1 CUP

Dried basil

1 TSP

Red pepper flakes

1/2 TSP Adjust to taste

Salt and black pepper

To Taste

Ziti
Ziti pasta (or your preferred pasta)

Baked Ziti
Shredded mozzarella cheese

2 CUPS

Parmesan cheese

1/2 CUP (grated)

Ricotta cheese

1/4 CUP

Fresh basil leaves

Chopped (for garnish)

Directions

Step 1:

Prepare the Air Fried Lobster Tail.

Step 2:

Preheat your air fryer to 380°F (193°C).

Step 3:

Using kitchen shears or a sharp knife, cut the top shell of each lobster tail lengthwise, exposing the meat. 

Step 4:

Brush the lobster tail meat with olive oil and add Italian spices and seasonings.

Step 5:

Place the lobster tails in the air fryer basket, shell side down. Air fry for about 5-7 minutes, or until the lobster meat is opaque and able to come out of the shell. Cooking time may vary depending on the size of the lobster tails and your air fryer, so monitor closely.

Step 6:

Once cooked, remove the lobster tail meat from the air fryer and set it aside. Remove the meat from the shell then cut half the tail meat into medallions and the other half into halves. 

Step 7:

Prepare the Vodka Sauce.

Step 8:

In a large skillet, melt the butter over medium heat. Add the chopped onion and sauté until it becomes translucent, about 3-4 minutes.

Step 9:

Add the minced garlic and red pepper flakes, and sauté for an additional minute until fragrant.

Step 10:

Pour in the vodka and let it simmer for about 5 minutes, allowing the alcohol to cook off.

Step 11:

Stir in the crushed tomatoes, dried basil, salt and black pepper. Reduce the heat to low, cover and let it simmer for about 20-25 minutes, stirring occasionally.

Step 12:

Prepare the Ziti.

Step 13:

Cook the ziti pasta according to the package instructions until al dente. 

Step 14:

 Drain and set aside.

Step 15:

Assemble and bake the ziti.

Step 16:

Preheat your oven to 380°F (193°C).

Step 17:

In a large mixing bowl, combine the cooked ziti, halved lobster tails (leaving three out for step 7) and the prepared vodka sauce. Toss until the pasta is well coated.

Step 18:

Spread pasta mixture in the bottom of a 9×13-inch baking dish.

Step 19:

Add 1/2 of the lobster medallions and sprinkle half of the shredded mozzarella and half of the grated Parmesan cheese over the lobster.

Step 20:

Layer the remaining pasta mixture on top, and top with the remaining cheeses and lobster medallions.

Step 21:

Broil in the preheated oven for 5 minutes or until the cheese is bubbly and golden brown.

Step 22:

Crown the 6 large pieces of lobster tails (3 halved tails) on top of the baked pasta. 

Step 23:

Garnish with chopped fresh basil before serving.
