Grilled Maine Lobster with Ginger-Citrus and Scallions

Ingredients

For Maine Lobster
Maine Lobster Tails

2 WHOLE CUT LENGTHWISE OR SPLIT

Scallion

1 BUNCH, CUT 2 INCHES LONG

Parsley Leaves

For ginger-citrus sauce
Ginger

2 TBLS. CHOPPED

Black Pepper

TO TASTE

Sesame Oil

1 TSP.

Juice From Lemons

Water

½ CUP

Unsweetened Rice Wine Vinegar

¼ CUP

Soy Sauce

¼ CUP

Oyster Sauce

½ CUP

Directions

Step 1:

Preheat grill to 400 degrees.

Step 2:

If starting with split lobster tails, move ahead to the next step. If starting with whole lobster: Place whole lobster on a sturdy cutting board. Apply slight pressure to your knife and cut lobster in half lengthwise. Rinse cavity.

Step 3:

Season with salt and pepper. Lightly coat lobster with ginger-citrus sauce and allow to sit for 30 minutes.

Step 4:

Place lobster halves shell side down and cook for 5 minutes while basting with sauce.

Step 5:

Close lid and allow to cook for another 12 minutes.

Step 6:

Gently uncover grill to find bright red hued lobster. Slowly turn over, and allow to mark flesh meat, about 2 minutes.

Step 7:

Remove from grill. Garnish with sliced scallions, parsley, and remaining sauce.
