Maine Lobster B.L.T

Fresh Maine Lobster

1 (1.25 – 1.5 lb.)

Brioche Bun



1 OZ.

Cooked Sliced Bacon

3 Pieces

Tomato Slices

3 Slices


1 Large Leaf of Romaine or Butter Lettuce

Step 1:

Steam the Maine Lobster.

Step 2:

While the Maine Lobster is steaming cook your bacon in the style you prefer.

Step 3:

Break down fresh Maine lobster and separate the meat from shell yielding 4 oz of cooked meat.

Step 4:

After separating the lobster meat, chop it into bite size pieces.

Step 5:

In a large skillet or on a griddle, warm butter on medium heat coating the pan.

Step 6:

Place both pieces of the bun cut side down onto the pan and cook for about 30 seconds until golden. Remove the buns from the pan and set aside for plating.

Step 7:

Toss the chopped lobster meat with the mayonnaise in a bowl and set aside for plating

Step 8:

Reheat the bacon slices in the pan, oven, or microwave.

Step 9:

Assemble the lettuce, tomato, lobster mix, bacon on the freshly toasted bun and enjoy!
