Directions
Step 1: Cook the Maine Lobsters
Boil 2-3 Maine Lobsters in salted water for about 15 minutes each to fully cook them.
Step 2:
Crack them open and separate the meat into one bowl and the shells into another bowl.
Step 3: Create Soup Broth with Maine Lobster Shells
In a large pot, toss in the lobster shells from the tail and claw, along with these ingredients:
1 chopped yellow onion
2 shredded carrots
2 chopped celery stalks
2 sprigs thyme
2 bay leaves
1 bunch chopped parsley
1 tsp black pepper corns
1 tsp kosher salt
Step 4:
Add enough cold water to cover everything, then simmer for at least 45 minutes.
2 cups of the broth will be used for the soup.
Step 5: Make the Broccoli Cheddar Soup
In a large Dutch oven over medium heat, melt 2 tbsp unsalted butter. Add 1 diced yellow onion and cook 4-5 minutes until soft. Add 2 minced cloves of garlic and cook for about 30 seconds until fragrant.
Step 6:
Stir in 3 tbsp all-purpose flour and cook for 1 minute.
Step 7:
Slowly whisk in 1 cup lobster broth, scraping the bottom of the pot until a smooth base forms.
Step 8:
Stir in 2-3 cups chopped broccoli florets and 1 cup shredded carrots.
Step 9:
Pour in 1 more cup of Maine Lobster broth and 2 cups of heavy cream.
Step 10:
Season with:
1 teaspoon garlic & herb seasoning
1⁄2 teaspoon kosher salt
1⁄4 teaspoon black pepper
Step 11:
Reduce the heat to medium-low and gradually stir in 2 cups of freshly shredded cheddar cheese.
Step 12:
Simmer for 15 minutes, stirring occasionally, until thick and creamy. It should be rich and velvety, not thin.
Step 13:
Add salt and pepper to taste.
Step 14: Prepare the Butter Sauce
Melt 2 sticks of salted butter with these ingredients:
2 tbsp chopped green onion
1 tbsp minced garlic
2 tbsp chopped parsley
1 tbsp red pepper flakes
Step 15:
Transfer to a squirt bottle.
Step 16: Assemble the Soup
Serve the soup in a sourdough bread bowl (optional).
Step 17:
Top with shredded cheese. Chop the lobster meat into chunks and place it on top of the cheese.
Step 18:
Drizzle with the butter sauce.
