Maine Lobster Salsa

4 oz fresh Maine lobster
1/2 green pepper, diced
1 yellow pepper, diced
1 orange pepper, diced
2 jalapeño peppers, seeded and diced
1 medium red onion, diced
6 scallions, sliced
1 fresh lime for juice
1 tsp balsamic vinegar
2 tbs extra virgin olive oil
1 tbs fresh cilantro, chopped
1 tsp garlic
1 tbs sugar
1/2 tsp chili powder
1/2 tsp oregano
1/4 tsp salt
1/4 tsp pepper


Cook and pick your Maine lobster, dice Maine lobster meat. Combine all ingredients together except Maine lobster meat and refrigerate overnight for flavors to blend. Upon serving, mix in the Maine lobster meat. Great served with tortilla chips.

Excellent accompaniment for any fresh cooked fish.
