Maine Lobster Mac and Cheese with Allagash Pairing

Ingredients

Maine Lobster Meat

1 POUND, CHOPPED

Dry Mustard

1 TEASPOON

Bay Leaves

Cloves

2

Good Quality Cheddar Cheese

2 CUPS SHREDDED

Sea Salt

1 TABLESPOON

Peppercorns

2 TEASPOONS FRESHLY CRACKED

Heavy Cream

1/2 QUART

Roux

(equal parts flour and butter, cooked together until lightly browned)

Macaroni

1 POUND, COOKED

Directions

Step 1:

Bring heavy cream to a boil in a medium saucepan.  Reduce and add mustard, bay leaves, cloves and cook 5 minutes on low heat.

Step 2:

Remove cloves and bay leaves.  Add roux and cook for an additional 5 minutes, then add cheese, salt, and pepper and whisk until the cheese is melted and well combined.

Step 3:

Add macaroni and Maine Lobster and place in an ovenproof baking dish and bake for 15 minutes at 375° F.

Step 4:

Pair with Allagash White
