Mini Maine Lobster Grilled Cheese with Creamy Tomato Soup

Ingredients

Hancock Lobster Mini Lobster Grilled Cheese Sandwiches

6 thawed

Tomato Bisque
Unsalted butter

6 TBSP

Yellow onion (diced)

1/2 onion

Diced tomatoes

28-ounce can

Water

1 CUP

Salt

1 TSP

Cracked Black Pepper

1/2 TSP

Baking soda

1/4 TSP

Dried thyme

1/4 TSP

Heavy cream

1/2 CUP

Lemon juice

1 TBSP

Cherry Tomatoes

Halved to garnish

Directions

Step 2:

Preheat your air fryer to 375 degrees.

Step 3:

Spray the air fryer basket with cooking spray.

Step 4:

Add the lobster grilled cheese sandwiches in a single layer. Air fry for 5 minutes, flipping halfway through. 

Step 5:

Set aside on a plate and prepare tomato bisque.

Step 6:

Melt the butter in a large saucepan over medium heat. Add onion and saute until translucent.

Step 7:

Add tomatoes and their juice, water, salt, pepper, baking soda, and thyme. Bring to a boil, reduce heat, and simmer uncovered for about 15 minutes or until slightly thickened.

Step 8:

Using an immersion blender, process until smooth. Alternatively, transfer contents to a blender and process until smooth.

Step 9:

With soup over low heat, slowly stir in heavy cream and lemon juice. Season to taste with additional salt and pepper.

Step 10:

Top soup with mini lobster grilled cheese and cherry tomatoes. Enjoy!
